About This Coffee
Pink Bourbon has become one of our favorite Colombian varieties to source, and some customers may already know it through our La Muralla Pink Bourbon Honey.
Rosa del Sur gives us the opportunity to explore that same variety through an entirely different process.
Where La Muralla's honey process created a beautiful middle ground between the heavier body and sweetness of a natural and the clarity of a washed coffee, Rosa del Sur is fully naturally processed. The ripe coffee cherries remain intact during processing and drying, extending the contact between the fruit and seed and contributing greater sweetness, aromatic intensity, and complexity.
For anyone who loved La Muralla, think of Rosa del Sur as its more fruit-forward counterpart: the same remarkable Pink Bourbon variety, interpreted through natural processing.
About The Process
Rosa del Sur begins with coffee cherries selectively harvested at optimal ripeness and transported to a central processing area.
After selection, the whole cherries rest overnight in a receiving hopper before being transferred to tanks for approximately 36 hours. The coffee then moves to the drying stage with the fruit still completely intact.
Drying takes approximately 15–20 days, depending on weather conditions, and is carefully managed to achieve uniform moisture reduction and stability. Keeping the coffee inside the cherry throughout this process increases fruit contact and helps develop the sweetness, aromatic intensity, and complexity that distinguish this lot.
